Ingredients

Serves 2-3 servings
  1. 1 piecepork tenderloin (I used about 14 oz)
  2. Crazy salt (or salt and pepper) to taste
  3. Black pepper to taste

Cooking Instructions

  1. 1

Rub the pork, which has been brought to room temperature, with plenty of crazy salt and black pepper. Wrap it in paper towels and let it sit for a few minutes to draw out moisture.

  2. 2

Heat oil in a frying pan and sear the pork evenly on all sides until nicely browned. Since it's pork, make sure to cook it thoroughly!

  3. 3

While the pork cools slightly, bring a pot of water to a boil. Wrap the pork in plastic wrap or foil, place it in a heat-resistant ziplock or similar bag, and seal it tightly.

  4. 4

Place the wrapped pork in the boiling water, cover the pot, and turn off the heat after about 3 minutes. Let it sit until the water cools to room temperature.

  5. 5

Once the water has cooled to room temperature, it's ready. Slice thinly and serve.
