No Onion No Garlic Vati Dal Vada
This is the Jain version of Vati Dal Vada.

Cooking Instructions

Wash the moong dal and rice thoroughly and soak them for about 5 hours or overnight.

Drain the soaked dal and rice.

Grind them (after keeping 1/4 cup aside) together in a blender on pulse mode with minimal water to make a coarse paste.

Transfer the paste to a mixing bowl.

Add the besan, rava and 1/4 cup soaked dal rice which we kept aside in step 3.

Add jeera-coriander powder, red chilli powder, turmeric powder, hing, chopped green chilies, lemon juice and salt.

Mix everything well.

Take small portions of the batter and shape them into round, flat discs and drop into the hot oil.

Fry them in batches, avoiding overcrowding the pan. Fry on medium heat until the vadas turn golden brown and crispy

Remove them with a slotted spoon and drain the excess oil

Serve the Jain Vati Dal Vadas hot with dates-tamarind chutney or tomato ketchup and enjoy ✨
