Pan- Seared pork chops with Mediterranean Flair

I grilled the pork chops in the air fryer on the grill setting or you can pan fry them. I was given some corn on the cob so I added that too. The tomatoes I did cut in half to make easier to eat and my kids are not fans of tomatoes I even cut some up extra small for the one kid who has texture issues and hates tomatoes, I was surprised when they both ate this and even liked it.
Slowly trying to incorporate this Mediterranean diet, used what I had on hand.
Will be making this again iam sure.

Ingredients

  1. 4pork chops
  2. 1/4 cupolive oil,
  3. 2 clovesgarlic,
  4. 1 tspdried oregano,
  5. 2 tbsplemon juice,
  6. 1 cupbrown rice,
  7. 2 cupscherry tomatoes,
  8. 2 tbspolive oil (for tomatoes)
  9. 1 tspdried oregano, (for tomatoes)
  10. salt, and pepper, to taste (for tomatoes)
  11. 1/2 cupcrumbled feta cheese,
  12. and fresh parsley

Cooking Instructions

    Marinate 4 pork chops in a mix of 1/4 cup olive oil, 2 cloves minced garlic, 1 tsp dried oregano, and 2 tbsp lemon juice for at least 30 minutes, then pan-sear until cooked through

    Serve with a side of brown rice topped with roasted cherry tomatoes, crumbled feta cheese, and fresh parsley, where the tomatoes are made by tossing 2 cups cherry tomatoes with 2 tbsp olive oil, 1 tsp dried oregano, salt, and pepper, and roasting at 400°F for 5-10minutes, or until forktender
