Easy lunch! Japanese-style pizza with whitebait, chikuwa and leeks

Perfect for summer! This Japanese-inspired pizza is a healthy and flavorful twist on the classic. It combines sweet leeks, savory whitebait, and chewy slices of chikuwa (a Japanese fish cake) for a light yet satisfying bite. The touch of chili peppers adds just the right amount of heat, and a drizzle of olive oil brings everything together.
Not only is it easy to make—just chop, layer, and bake—but it’s also a wholesome choice, packed with protein and nutrients from the seafood and veggies. It’s perfect for a light lunch or as a healthy, shareable appetizer with drinks.
Pro tip: For a crispy crust, brush olive oil all the way to the edges of the dough. Place sliced leaks on top for a beautifully roasted finish. Keep an eye on the pizza as it bakes—every oven is different, so once the edges are golden and the cheese is bubbly, it’s ready to enjoy!
