Hi, My name is Brenda and I rep Owerri in Imo State and for this Rep your state Challenge I share with you Ugba which other tribe call ukpaka. This is an Owerri special recipe; ugba is use to entertain guest more like an appetizers and often enjoyed with roast yam during the new yam festival like oru owere. You can mix it in abacha to get the another full effect.

Ingredients

  1. 2 cupsugba
  2. 1 tsppotashed powder
  3. 1cksp palm oil
  4. 2 tbspblended pepper
  5. 1bulb onion dice
  6. 1/2 cupcrayfish
  7. 1 cupkpomo diced
  8. utazi leaf diced
  9. to tastesalt
  10. 2knorr cube

Cooking Instructions

    Pour potash in a small bowl and add water soak

    In a medium pot pour in Palm oil and stir in potash water and stir to get a yellow consistency sauce once it thick and yellow

    Add salt, knorr cube, crayfish, pepper and onion and stir

    Add ugba, kpomo, taste to confirm consistency then add the utazi leaf mix in together and serve
