These little cakes are a fun take on peanut butter and jelly. They make 5 three layer cakes so if you want more you can make them just 2 layer to make about 7 cakes. Either way they are delicious with the moist chocolate cake and light flavorful whipped creams.

Ingredients

  1. FOR CHOCOLATE CAKE
  2. 2 cupall-purpose flour
  3. 1 cupunsweetened cocoa powder
  4. 1 1/2 tspbaking soda
  5. 1/4 tspsalt
  6. 3/4 cupunsalted butter, at room temperature
  7. 1 cupLight brown sugar, packed
  8. 1 cupgranulated sugar
  9. 3large eggs
  10. 1 tspvanilla extract
  11. 1 1/2 cupbuttermilk
  12. PEANUT BUTTER AND STRAWBERRY WHIPPED CREAM
  13. 1recipe Peanut Butter Whipped cream, recipe attached in direction step #10
  14. 1recipe Strawberry Whipped Cream, recipe attached in direction step # 11
  15. GARNISH
  16. 5whole fresh strawberrys
  17. 1/4 cupchopped honey roasted peanuts

Cooking Instructions

    Preheat oven to 350. Spray a sheet pan with bakers spray. Line the bottom with parchment paper and spray paper with bakers dpray

    Whisk flour, cocoa poder, baking soda and salt in axbowl

  3. 3

    In a large bowl,beat butter and both sugars until light and fluffy, add eggs one at a time, beat in vanilla, Beat in flour mixture aternating with buttermilk just until smooth

    Pour batter into prepared sheet pan and smooth to an even layer

  5. 5

    Bake 16 to 18 minutes until a toothpick comes out just clean. Cool on a rack 30 minutes

    Invert onto clean kitchen towel and carefully peel off parchment paper

    Using a 3 inch biscuit or cookie cutter cut circles out of the cake

    TO ASSEMBLE CAKES

    Put one cake circle on plate

    Top with another cake circle and top with some Strawberry Whipped Cream, recipe attached below,

    Add third layer and top with peanut butter whipped cream

    Garnish each with chopped peanuts and a strawberry

    TIP, Make cake crumbs out of the unused cake scaps, they are delicious in ice cream, or as a topping to other cakes, brownies or bars. Freeze them to have around.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
