I made this last night....so good...the kids aged 2 and 6 ate turnips....lol. I won the veggie war ~(o.o)~

Cooking Instructions

heat oil in large dutch oven or stockpot over medium high heat. Season the beef with salt and pepper. Add the roast to pan and brown all sides. Using tongs remove it from pan and set aside...To same pan add leeks, sweet potatoes and turnip....( chopped of course).. and stir a few times, until veggies begin to brown....

whisk remaining ingredient in medium bowl

return meat to pan and add sauce
- 4
bring to boil...then cover.....reduce heat to low
- 5
turn roast every 20 minutes or so...until meat and veggies are tender about 1 1/4 hours

let rest 15 minutes..... enjoy

These are seasoned, roasted carrots. The quantities are approximate since I usually make this without a recipe, and created it over time. Feel free to play with the spices. The cooking time will vary with the shape and thickness of your carrot pieces. This can be served at any temperature, although I prefer it hot. It keeps well, so it can be made ahead and then reheated.I originally started making this with chopped onion and chopped garlic, but found those cooked differently than the carrots, and it made for a longer prep time. In my quest to create an simple, fast to prepare dish, I switched to using onion and garlic powder. I actually had this on Thursday, but it’s being published on a Sunday, the holy day of roasts.Leeks are in season at the moment, and also have the benefit of being really nice. Oniony but fresh. Cooking them in a mustard sauce basically combines the best bits of beef and mustard, and the best parts of a leek and potato pie (sans potatoes) two great, classic combinations.Easier to make this at the weekend- I had to go like the clappers to get this cooked after work to eat before 9 pm. This is an adaptation of a recipe from The Explorers Journal, which is a hiker/explorer quarterly I picked up at a Fjallraven store, where my husband bought a raincoat. The original recipe called for "rock tripe" as the protein, which is a mushroom that can be gathered while hiking, as a survival soup. How hikers would source the chicken stock, brown sugar, vinegar etc. I don't know. Jeff Lynch
