Jollof rice with fried plantain and chicken
Always packing good for hubby.
Cooking Instructions

Open the tin of corn and drain the water.

Parboil rice for 15minutes.wash the rice and keep.

Boil the chicken.spice it up very well with salt,onion and knorr seasoning, thyme.

Boil with medium heat for 30minutes.taste to confirm is soft

Blend the tomatoes and fresh pepper with ginger.

Fry all the blended things with vegetable oil for 10mins.

Add the sachet tomatoe paste fry for more 2mins.

Pour in the chicken stock and more water and boil

As is boiling pour inbthe rice.mix with a wooden spoon. Add knorr seasoning,curry,salt,

Cover and allow to boil,boil till is almost dry and pour in the corn.

Bring down when you confirm done.

Cut the plantain and fry in a hot vegetable oil.

Fry for 2mins.serve with the rice and chicken.
