Ingredients

4 servings
  1. 1sausage
  2. 4 tablespoonsCoconut,Olive or groundnut oil
  3. 4eggs
  4. 4red bell peppers
  5. 1big green pepper
  6. 1onion bulb
  7. 1 clovegarlic
  8. Seasoning(half teaspoon of curry, thyme, half cube of maggi)
  9. Pinchsalt to taste

Cooking Instructions

    Wash all the veggies and chop into bits. On low heat, heat up the fry pan, toss the sausage in and stir for 30 seconds. When that is done, slice into tiny round circles and keep till needed

    Heat the fry pan on low heat, add two tablespoons of oil leave to heat up for 4 seconds, pour in the onions and stir for 3 seconds, add garlic and leave to sizzle for another 2 mins

    Add the red and green peppers and stir fry for 2-3mins, add the seasonings and a pinch of salt and stir for a min or two then,add the sausage and stir for a min.

    Break your eggs into a bowl and pour the sauted sauce and mix well, while doing that wash your pan so it's clean for fhe next step.

    Heat the pan back on low heat, add the remaining tablespoons of oil, pour in the egg mix and cover the lid, be sure not to stir. Leave to cook for 4mins and check to make sure it's solid.

    Once the solid state is formed you meal is ready to b served with plaintain or any other fries.
