Neapolitan Layer Cake

This cake dedicated to my Dad, who treated his kids to ice cream all summer. It was a fun event to go to the local creamery for homemade ice cream. Living in New England however meant all the creamerys shut down for the winter. My Dad would bring home neapolitam ice cream in the winter from the grocery store saying it was perfect with 3 flavors in one! When I was getting into making layer cakes this was one of my first. It is time consuming but easy to prepare. It is a crowd pleaser and the flavors of the cake are delicious!

Ingredients

  1. FOR THE CHOCOLATE CAKE
  2. 6 tbspunsweetened cocoa powder
  3. 3/4 cupplus 2 tablespoons all purpose flour
  4. 1/2 tspbaking powder
  5. 1/2 tspsalt
  6. 1 tspbaking soda
  7. 1 cupgranulated sugar
  8. 1/4 cupcanola oil
  9. 1 largeegg
  10. 1/2 cupcold coffee. instant or brewed
  11. 1/2 cupbuttermilk
  12. 1/2 tspvanilla extract
  13. FOR THE VANILLA CAKE
  14. 1 3/4 cupall-purpose flour
  15. 2 largeegg whites
  16. 1 1/2 tspbaking powder
  17. 1/2 tspsalt
  18. 1 cupgranulated sugar
  19. 8 tbspunsalted butter. at room temperature
  20. 3/4 cupmilk
  21. 1/2 tspvanilla extract
  22. FOR THE STRAWBERRY CAKE
  23. 1 1/4 cupplus 2 tablespoons all purpose flour
  24. 1 1/4 tspbaking powder
  25. 1/4 tspsalt
  26. 1 cupgranulated sugar
  27. 1 1/2 ozstrawberry jello powder, 1/2 of a 3 ounce box
  28. 8 tbspunsalted butter, at room temperature
  29. 2 largeeggs
  30. 1/2 cupmilk
  31. 1 tspvanilla extract
  32. 1/4 cupdtrawberry puree from hulling and slicing about 1/2 pint fresh strawberry and blending until smooth
  33. FROSTINGS
  34. 1recipe White Chocolate Ganache, recipe attached in direction step# 19
  35. 1recipe zchocolate Ganache recipe attached in direction step# 20
  36. GARNISH
  37. fresh strawberrys
  38. 1/4 cupchocolate and muti cored sprinkles

Cooking Instructions

    MAKE CAKES.

    For all three cakes, preheat oven to 350. Spray 6 - 8 inch cake pans with baking spray

    MAKE CHOCOLATE CAKE

    In a bowl whisk flour. Cocoa powder, baking sofa, baking powder and salt

  5. 5

    In a large bowl best sugar oil and egg until combined add 1/2 of flour mixture and stir until just combined

  6. 6

    Add coffee, buttermilk and vanilla. Then add remaing flour mixture and beat just until smooth

  7. 7

    Divide between 2 of the prepared cake pans and bake about 15 to 20 minutes until a toothpick comes out just clean Cool 20inutes in pan before removing to cool completely

    MAKE VANILLA CAKE

    In a bowl whisk together flour ,baking powder and salt

    In a large bowl beat egg whites until stiff peaks form

  11. 11

    In another large bowl beat butter and sugar,until light and fluffy. Beat in half the flour mixture, stir in milk, and vanilla, add remaining flour mixture and stir just until blended

    Fold 1/3 of egg whites into batter, then add remaining folding in 2 more additions. Pour into 2 prepared pans and bake 12 to 19 minutes until a toothpick just comes out clean. Cool 10 minutes in pan before removing from pans to cool completely

    MAKE STRAWBERRY CAKE

    In a bowl whisk together, flour, baling powder and salt

    In a large bowl beat sugar, jello powder and butter until light , beat in eggs one at a time until smooth

    Alternate flour mixture with milk and vanilla stirring just until combined, fold in strawberry puree until uniform in color. Pour into remain in 2 pans. Bake 18 to 25 MI utes u til a toothpick comes out jut clean. Cool 10 minutes in pan the cool completely

    ASSEMBLE CAKE

    Place 1 chocolate layer bottom side up on serving plate

    Add 1 layer of vanilla cake, bottom side up and frost with Chocolate Ganache frosting, recipe attached below

    Add 1 layer of strawberry cake, bottom side up and frost with White chocolate ganache frosting

    Add last vanilla layer, bottom side up and frost with Chocolate Ganache

    Add last chocolate layer and frost with chocolate ganache

    Add last white layer top side up and frost entire cake with White chocolate ganache

    Garnish with fresh strawberrys and sprinkles

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
