Ingredients

30 servings
  1. 1 lbBacon cut into very small pieces
  2. 1 lbSweet Onion diced very fine
  3. 2 1/2 lbvery lean hamburger
  4. 6 tbspchili powder
  5. 1 tbspvery finely minced garlic
  6. 1 tbsponion powder
  7. 1 tbspgarlic powder
  8. 1 tbspcumin
  9. 1 tbspblack pepper
  10. 1 1/2 tspcayenne pepper
  11. 1 1/2 tsporegano
  12. 2 cangreen chilis (4oz)
  13. 6-7oz bottles of Corona beer
  14. 3 canfire roasted diced tomatoes (14oz)
  15. 2 cantomatoe sauce (15oz)
  16. 2 cantomatoe paste (6oz)
  17. 1 ozunsweetened bakers chocolate finely grated

Cooking Instructions

  1. 1

    In a large skillet cook your bacon, at the same time in a large stock pot brown your hamburger

  2. 2

    when bacon is done add to the pot of hamburger, then leave only enough bacon grease in pan to cook your onions and garlic (I like to save the leftover bacon fat for later use and put in a jar in my refrigerator) saute onion and garlic till tender and add to your hamburger

    Add 4 bottles of beer, canned diced tomatoes, tomatoe sauce, tomatoe paste, green chilis with the juice, and all seasonings, and bring to a low boil then turn down to a med-low to cook, remember to stir from the bottom so it doesn't stick,

    after an hour add the last 2 bottles of beer, and the grated chocolate and keep cooking for at least 1 more hour, keep stirring it on and off

    now your ready to serve, don't shorten the cooking time, this needs to cook for at least 2-3hrs for best results,

    serve with sour cream, shredded cheese, green onions, corn chips what ever you like to top your chili off with

    if you do not want to use beer, apple juice can be substituted for the beer, it will only affect the taste slightly

    if you want to add beans, add a can of red kidney beans halfway through cooking, this way they will not over cook

I love being in the kitchen and My hubby and I love riding bikes! We do a lot of fundraising for the veterans homes in our area and other programs while we ride our bikes, thats part of what our group is all about, I have a couple auto immune diseases that can slow me down quite a bit, I have Lupus and Sclerderma to name some of what I suffer, but I keep going and will not stop I know I just have to, I have been married for 37 wonderful years to a great man, have 2 great boys and adore all my grandkids
