I have been making this chili for many (many) years. It is very easy to make, and is a fantastic way to warm up on a cool day.

Ingredients

1 hour
  1. 1 lbGround beef
  2. 1 lbGround pork
  3. 1poblano pepper, chopped
  4. 1jalapeño pepper. chopped
  5. 1 largeonion, chopped
  6. 2 clovegarlic, minced
  7. 3 tbspchili powder
  8. 2 tbspground cumin
  9. 10 ozcan Rotel tomato (get the hot if you like your chili spicier)
  10. 48 ozchili beans (with sauce)
  11. 12 ozbeer (dark beer tastes great in this recipe)

Cooking Instructions

1 hour
  1. 1

Brown ground beef and pork. Drain off fat.

  2. 2

Add fresh chilies and onion. Cook for 5 minutes, until onion is translucent.

  3. 3

Add garlic, chili powder, cumin, Rotel, chili beans and beer. Bring to a boil.

  4. 4

Turn down the heat and cook covered for at least 30 minutes. If the chili is too thick, just add water or beer.

  5. 5

You can add some heat to this by adding more peppers. I love to eat this with a nice crunchy grilled cheese sandwich. This (as all chili) is better the next day.
