Chompin' good Chili

I have been making this chili for many (many) years. It is very easy to make, and is a fantastic way to warm up on a cool day.

I have been making this chili for many (many) years. It is very easy to make, and is a fantastic way to warm up on a cool day.
Cooking Instructions
- 1
Brown ground beef and pork. Drain off fat.
- 2
Add fresh chilies and onion. Cook for 5 minutes, until onion is translucent.
- 3
Add garlic, chili powder, cumin, Rotel, chili beans and beer. Bring to a boil.
- 4
Turn down the heat and cook covered for at least 30 minutes. If the chili is too thick, just add water or beer.
- 5
You can add some heat to this by adding more peppers. I love to eat this with a nice crunchy grilled cheese sandwich. This (as all chili) is better the next day.

Chili for when it's chilly. This'll warm you up for sure! This makes a thick, hearty chili. I started making it this way years ago after getting bored with our same ole same ole, and deciding to experiment. The hubby loves it with honey butter cornbread (recipe on my profile for that too).
