The Chicken with Coconut Milk is a typical recipe from Thailand, but I like to propose it as a variant for Brazilian dishes as its main ingredient, coconut milk, is very common in Brazil.

Veggie Stew with just Carrots & Peas in Tomato Sauce
Hello everyone…hoping the weekend was a good one. It’s Monday, the beginning of a new week and hopefully a good one for everybody. This weekend was quite warm. sunny and just lovely to be outside. When I mean outside I just sat in the garden and caught up on some reading material on food blogging of course, and some other things that I needed to catch up on. I did a bit of gardening 🙂 and I just wanted to thank Luda from Plants and Beyond, for her advise in regards to adding coffee grinds into my small garden it was spot on! 🙂 All my herbs and salads flourished these past weeks, and we were able to have home grown lettuce in our salads!! hooraayyyy 🙂 Just fantastic!! I also planted Broccoli, this has become huge I am not sure if my little garden will be able to hold it. 🙂This is a Greek dish…with ingredients that I am hoping would exist in everyones fridge. I know that Carrots and Peas may not be the first choice for lunch or dinner, but if you add tomatoes and a bit of tomato paste well I am sure you will be going back for more. 🙂 It is truly a very simple recipe just a few steps and you’ve got a delicious and healthy meal for lunch or dinner or even a side dish.. 🙂

A bowl of homemade Tomato Soup
At the beginning of the New Year I set a few goals, one of those goals was to try to post at least 3 recipes a week. But, it seems that I am not at point with this goal so far this month and I am hoping to get back on track soon. I have been trying to catch up on reading for my Dutch lessons, (mindset is really not into this) and helping my husband recover from his Ulcer, thank god he is much better and back at work. 🙂What a day we were having yesterday, we saw a bit of all 4 seasons in one day. A little after 2 pm this beautiful sun came out and just kinda made my day. 🙂 I went to the market to pick up a few things, and I found these absolutely beautiful Roma Tomatoes. I knew right away that these were the perfect choice for the tomato soup recipe I had in mind. After quickly shopping at the market I returned home to get ready to go meet my brother but something came up so instead he came over later in the day for a cup of coffee. 🙂 We spent a lovely afternoon chatting away about various things that are going on in our lives.Once my brother left I started working on the recipe, it turned out better than I expected. Enjoy!!!

Chicken & Green Bean Pot Stew
Hi everyone!!! After yesterday’s Clean Monday or Ash Monday and a day of fasting, I am back with another Chicken recipe. 🙂 Fasting usually last for about 40 some odds days, which is way to long of time at least for me that is, so what I usually do is fast the last week before Easter. I think most people do that know, busy schedule and fasting a bit difficult. If your in the mood to eat something different give this recipe a try, you just might like it. 🙂My husband is a fan of Green beans, me not so much, but before I say NO to something I like to try it out first, I have actually tried to eat them a few times in the past, but it was a no go. I gave it one more try again today just in case my tastebuds have changed aaaand NO they have not..:), so I can officially say I am not a fan of Green Beans.Since, I do love Chicken this recipe has the combination of both worlds, and the taste is just superb (Chicken of course is). 🙂 With the addition of fresh tomatoes and herbs simmering together just makes you want to eat it all at once. Adding a side dish of Feta cheese, drizzled with Olive Oil, topped with fresh Oregano, dipping that fresh slice of bread into the sauce AWWW!! what more can I say. 🙂

Chicken Melted Excellence. 🙂

Tempting Oven Baked Chicken & Aubergines (Kotopoulo me Melitzanes sto fourno)
Hiiii, just got back from my Dutch lesson…Yes, I have been taking Dutch lessons for a year on and off. Trying to learn a language that is more difficult than the Greek language!! If your a native English speaker it’s very confusing. For example let’s say you go to the supermarket and your at the register to pay, instead of 51.00 euros which is the total amount you see, they tell you the amount is 15.00 euros, they switch the numbers around….I still can’t understand why this is done. 🙂 But I have to admit I have a super great teacher who talks slowly and I can understand her and she has helped me so I am able to understand what I’m reading 🙂 at least most of the time and I can also write a bit, but talking Uxxxxxx!!!…That’s a whole different story. 🙂 I also have my Dutch friends who have been super supportive and try to talk to me in Dutch but then for some reason the conversation quickly turns into English..hehehe (back to the recipe) 🙂One of the first things my mom gave me before I got married was a Greek Cookbook from a Greek Chef from back in the 60’s. When I started going through the Cookbook I noticed that it had some wonderful recipes and colorful pictures, at the time I thought to myself how so far ahead of his time he was for a Greek Chef. (When we first moved to the Netherlands the first thing I packed was this cookbook just love it) The first recipe I tried from his cookbook, and mind you I was barely speaking, writing or reading Greek at the time
