You can use it as a dip or as a healthier version of mashed potatoes. It goes well with meat and you can barely taste the cauliflower. It's also very creamy so you don't have to add a lot of butter

Ingredients

  1. 1 headcauliflower
  2. 2carrots
  3. 1spoonfull of softened cream cheese
  4. 2spoonfulls of plain yoghurt
  5. 1 tspof butter
  6. 1 dashof salt, pepper and rosemary to taste

Cooking Instructions

    Clean and chop the cauliflower and set aside

  2. 2

    Set a pot of water over medium high heat

  3. 3

    Once the water is boiling, carefully add your chopped cauliflower and cover the pot. Bring once again to a boil

  4. 4

    Then reduce heat to low and add the carrots. They should be peeled and roughly chopped. You can put more carrots if you want to

    Simmer for 10-15 minutes over low heat or until the cauliflower and carrots are mushy, not crunchy

    Once they are steamed, drain the water. Add the butter, yoghurt, cream cheese and seasoning

  7. 7

    Mash with a hand blender until smooth. It can be served warm or cold

Super yummy! I would suggest only using one carrot. Two overpowered the cauliflower. It still tasted amazing though. :ohyeaah
