Ingredients

  1. 1small onion diced
  2. 2 clovesgarlic chopped
  3. 1/2jalapeno diced small
  4. 3 tbspunsalted butter
  5. 2 tbspolive oil
  6. 1/4 cupwhite wine
  7. 1 tbspcapers
  8. 6fresh basil leaves chopped small
  9. 2small red potatoes 1/2" diced
  10. 1 cancorn 15 oz
  11. 3/4 cupgrape tomatoes sliced in half
  12. 1/2 cupcrab claw meat
  13. 1/2 cupshrimp cleaned and chopped
  14. 3 tbspflour
  15. 1 cupheavy cream
  16. 2 cupsmilk
  17. to tasteSalt and pepper

Cooking Instructions

  1. 1

    Melt butter in pan add olive oil onions and garlic saute oh let's not forget the jalapeno

    Make a roux with the flour. don't burn your roux. Now add wine

  3. 3

    Add heavy cream and milk diced potatoes capers and crab and shrimp

  4. 4

    Add tomatoes and basil corn salt and pepper to taste. A little zatarains seasoning always helps

    Enjoy a cold beer with this

I was an over the road truck driver for over 32 years I have been to every great state we have and 3 Canadian provinces been to Mexico many times and I have EATEN SOME OF THE BEST FOOD KNOWN TO MAN . when I would come home I loved to play in the kitchen !
