Brad's bacon wrapped beer battered Ling cod

Ingredients

  1. 2 lbscod filets. Portioned
  2. Thin strips of bacon
  3. For the batter
  4. 1 1/2 cupsflour
  5. 1/2 cupcornmeal
  6. 1 tbsbaking powder
  7. 1 tspgarlic powder
  8. 1 tspgranulated chicken bouillon
  9. 1/2 tspeach, dry mustard, white pepper, smoked paprika
  10. 12 Ozbeer. Lager or pilsner
  11. Other ingredients
  12. Oil for deep frying
  13. Tooth picks
  14. Tartar sauce

Cooking Instructions

    Portion cod into serving sized pieces. Sprinkle with sea salt and pepper. Let sit a couple minutes.

    Heat oil in fryer to 360 degrees.

    Mix dry ingredients for batter. Slowly mix in beer, preferably left open for an hour so it is less carbonated.

    Use an entire strip of bacon to completely wrap piece of fish. Secure with a tooth pick.

    Dip fish in batter. Coat completely. Let excess drip off. Slowly dip in hot oil. Cook 5-6 minutes. Flip over once.

    Drain on paper towels. Serve with tartar sauce. Enjoy

    Don't forget to remove the toothpick.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
