Ingredients

  1. 1 tbspoil
  2. 1onion, chopped
  3. 1 tbspmustard seeds
  4. 1green chilli, finely chopped
  5. 2 tspfinely chopped garlic
  6. 1 tspfreshly grated ginger
  7. 400 gcanned, chopped tomatoes
  8. 25 gdesiccated (finely shredded) coconut
  9. 1 tspmild curry powder
  10. 1 tspground turmeric
  11. 1 tspground cumin
  12. 2 tbspcoconut cream
  13. 4medium sized, pre-boiled potatoes, chopped
  14. 2 tbspfreshly chopped coriander / cilantro
  15. to tastesalt
  16. to tastesugar

Cooking Instructions

  1. 1

    Heat the oil in a pan over a medium low heat and cook the onion, mustard seeds, chopped chilli, garlic and ginger for 5 minutes

    Stir in half of the chopped tomatoes, desiccated coconut, curry powder, turmeric and cumin

  3. 3

    Stir in the cream and chopped potatoes

  4. 4

    Add the rest of the can of tomatoes and let simmer for 10 minutes. You can add a bit of hot water if you feel the sauce is too thick. Stir through the chopped coriander, add salt and sugar to taste and serve hot with rice
