Ingredients

6 servings
  1. 4-6 ouncesbacon, diced
  2. 4 tablespoonsunsalted butter
  3. 1 cupchopped onions
  4. 4-6 tablespoonsflour
  5. to tasteFresh ground black pepper
  6. to tasteThyme
  7. 5 cupscooked diced potatoes
  8. 1 quarthalf and half
  9. 1 cupchicken broth (made from knorr homestyle stock)
  10. 3 (6 1/2 oz)cans minced clams or 3 (6 1/2 ounce) cans chopped clams
  11. 1 cupclam juice
  12. Chopped Italian parsley
  13. to tasteFresh lemon juice
  14. Hot pepper sauce
  15. Salt

Cooking Instructions

    Fry bacon until crisp

  2. 2

    Remove bacon, set aside to be used later

  3. 3

    Add butter to bacon grease, when melted add onions and saute until golden

  4. 4

    Stir in flour and cook over low heat 5 minutes, stirring constantly

  5. 5

    Stir in pepper and thyme

  6. 6

    Add chicken broth, half and half, and potatoes

  7. 7

    Bring to a boil; reduce heat and simmer, stirring frequently, about 5 minutes. (Be careful and watch that it doesn't cook above a simmer or very long!)

    Add clams, clam juice, parsley; simmer another 5 minutes; stirring occasionally.

    Add lemon juice, pepper sauce, and salt to taste

  10. 10

    Serve with oyster crackers
