Great for Lunchboxes! Gyoza Spring Rolls
These spring rolls are packed with vegetables and have a gyoza flavor that kids love! You can freeze them before frying, making them perfect for lunchboxes. I came up with this recipe when my kids were little, as a lunchbox side dish. Freezing them before frying made it convenient to fry them straight from the freezer on busy mornings. The kids found them easier to eat and tastier than regular gyoza, so they've become a family favorite.

Memil Jeonbyeong (Buckwheat Crepe) Style Fresh Spring Rolls
The authentic memil jeonbyeong is a chewy buckwheat crepe with namul, kimchi, Korean BBQ meat, cellophane noodles and other fillings, but I made an easy version by wrapping with rice paper wrappers. It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate in cold water until you get the hang of it. If the rice paper wrappers are too hard to roll, wait a little until the moisture from the ingredients soften the wrapper. It will soon be soft enough to handle. Recipe by Heartful Kitchen Rei

Vietnamese Fried Spring Rolls
A traditional dish for Tet and full moon days in Vietnam. During family gatherings, everyone makes this dish together, enjoying each other's company while preparing everything to offer to the ancestors. We hope for good health, well-behaved children, and prosperity. Family is like that. My grandmother taught me how to make this dish and said, "No matter where you go or what you do, never forget the taste of your homeland and how to create it. Also, never forget that you are Vietnamese." Traditional dishes are an invisible bond between generations, a connection that transcends time.
