String beans subzi

Simple dry subzi as side dish..for serving in every day meal ,made with string beans ( chawli), potato and fenugreek leaves ( methi) muthiyas.
Cooking Instructions

Wash and chopped string beans into small pieces, boiled in microwave safe bowl,with a pinch of soda-bi-carb and salt add 2 tbsp water...for 5 mins on 80 power level.

Peel and wash potato, chopped into small pieces. Add & heat 1 tbsp oil in nonstick pan,add & saute potato pieces till golden brown in colour.Remove & keep aside.

In same pan add & heat 1 tbsp oil,do tempering of mustard, cummin seeds,as they crackle add asafoetida,turmeric powder, green chilli- ginger paste, mix & saute for few sentences. Add boiled string beans pieces,fried potato pieces and chopped fenugreek muthiyas..mix well

Add salt, red chilli powder,dhania jeera powder, sugar or jaggery, lemon juice and salt to taste,mix and cook for 2-3 mins.

Serve hot String beans subzi garnishing with chopped fresh coriander leaves.
