Cooking Instructions

In a big bowl, put all dry ingredients and mix well.

Add in water little at a time and mix until batter is well mixed. Not too thick not too watery

Share the batter into two deep and big bowls, for space when it begins to rise. Keep batter in a warm place for effective rising. Allow to rest for 1hr.

After 1hr, put pan of oil on fire and allow to heat up, about 10mins.

Bring out batter and beat very well, then start scooping into hot oil with hands. Continue until pan has about 35 Puffs in it.

Continuously flip puffs for an even frying.

Once puff turns golden on both sides(not in all cases), use a perforated spoon to pack puffs out into a colander.

Continue the scoop and pack process until batter is used up.

I created this recipe to enjoy leftover mochi. I added a small amount of sugar, and made it sweet and salty.When mochi contains a lot of water, oil will splatter while deep-frying, so dry it for 5~7 days if you can.
