Ingredients

  1. 3 cupsEgusi soup
  2. 1 kgbeef
  3. 4 piecesstock fish
  4. 3large dry fish
  5. 1and half cup of palm oil
  6. 8 pieceshabanero pepper
  7. 1bulb of onion
  8. 2 tablespoonsblended crayfish
  9. Halfteaspoon blended uziza seed
  10. 2negro pepper (uda seed) with seed removed
  11. 3stock cube
  12. 1 tablespoonlocust bean (iru)
  13. Halfwashed bitter leaf
  14. to tasteSalt

Cooking Instructions

    Season your beef with salt, two stock cube and some slices of onion, add water to the level of the content of the pot then cook till tender, you can top up water as it cooks then add the stock fish to soften half way cooking

    Next top the boiled meat in the pot with about two litres of water then bring to boil

    Blend the melon with onion then add to the pot and cover to cook for about ten minutes then add palm oil, allow to cook again for some minutes

    At this point add the dry fish, bitter leaf, blended pepper, iru, uziza seed and the uda seed, this time open and allow to start to thicken

    Add the crayfish then taste and adjust with the remaining stock cube and salt

    Allow to thicken to your desired consistency then bring down
