I don't really enjoy my stew if I boil the tomatoes so I decided to try something different.
Cooking Instructions

Wash the tomatoes and put in an oven to dry up the water. Wash the pepper and the shombo and blend together with the tomatoes, don't add any water. Set aside

Place a dry pot over a low heat allow to heat up add the chopped onions fry it for few minutes in veg oil add the blended tomatoes.

Fry for 15 mins but always stir so that it doesn't get burnt. Add beef stock. salt and seasoning if need be. Cover it and allow it to boil for few minutes.

It's ready.

I always have fish sauce in the fridge so I added it to the stew and served with bread.
