Mutton korma
Today I made this mutton korma in dinner. #RamadanSpecial
Cooking Instructions

Wash and clean the mutton pieces and drain the water.

Slice 3 medium size onion and fry it in oil till golden brown. Take it out and allow it cool and crush them with hand till powdery.

Take a pressure cooker and heat 5 tbsps oil.

Now add the whole garam masala and sauté it, add mutton pieces mix it well and keep frying for 7-8 minutes on high flame till the mutton colour changes and leaves water.

Now add ginger garlic paste, mix it and keep frying on medium flame for 1 minute.

Add all the masalas/ powder red chilli powder, coriander powder, turmeric powder, and salt.

Mix it and cook (fry) the mutton till the oil separates.

Now add water as required To cover the mutton and pressure cook for 3-4 whistles.

Allow it to cool before opening the lid.

Place the cooker back on heat and cook on high flame for around 2-3 minutes to dry up any excess water.

Now switch off the flame and add the curd in it.

Put it back on heat and cook for few minutes that curd get cooked.

Now add fried onion paste in it and cook for around 10 minutes till oil separates.

Add mace and nutmeg powder, mix it and simmer for 2 minutes.

Lastly add kewra water, mix it and cook for few seconds.

Our mutton korma is ready. Serve it roti or rice.

#reststyle - This is a traditional Bengali style Mutton Korma / curry, where I have used large chunks of potatoes, as it is well known, Bengalis love them in each and every dish. And to think of preparing a mutton curry without it, is not easily digestible. Mangsho /Mutton is a very popular sunday menu in almost all Bengali bones and is equally relished in all Bengali restaurants too. Here in this particular version of mine, I added some roasted fresh coconut and fried onion along with the usual ingredients to make the dish more rich and aromat. It is relished either with plain steamed rice, poori or chapati. There is no ham in trying it out with jeera rice, khushka, naan, tandoori roti or any Indian bread.
