Cod and Potatoes Simmered with Tomatoes

I wanted to eat cod in a western style dish and came up with this recipe. My aim was to create a main dish that could be made with ingredients I usually have on hand, so I simmered the cod with canned tomatoes. It matches perfectly with the potatoes too.
Use raw unsalted cod.
I didn't add any herbs and so on this time and kept it simple, but if you add herbs when simmering it will become even more delicious. For 2 servings. Recipe by yaburie
Cooking Instructions
- 1
Slice the onion thinly. Cut the potato in half, then into 5 mm thick slices and put into a bowl of water. Slice the garlic.
- 2
Season the cod with salt and pepper, and press lightly with your hands.
- 3
Heat up the olive oil and garlic in a frying pan. When you can smell the garlic add the onion and stir fry over medium heat.
- 4
When the onion has wilted, add the well-drained potato slices and continue stir frying.
- 5
When the edges of the potato have started to turn transparent, layer the pieces of cod on top. Add the canned tomatoes while crushing them with your hands.
- 6
Add the white wine and 1/2 teaspoon of salt. Cover with a lid and simmer until the potato is tender, for about 10 minutes over low-medium heat.
- 7
When the potatoes are tender, adjust the seasoning with salt and pepper and transfer to serving plates. Scatter with some parsley if you like.

Cod, Potato and Tomato Soup Cod, Potato and Tomato Soup
I made this soup with leftover cod and vegetables. Even though I didn't use any bouillon cubes, the soup was still very flavourful. My daughter loved it and finished it all. I wanted to save this dish as a part of my family's repertoire. This is a simply flavoured soup. Skim off the scum carefully. The black peppercorns enhance the flavour of the soup, so they are essential. (But you can leave them out when you serve this soup to your children.)The saltiness of the cod affects the taste of the soup. Check the seasoning and adjust the salt to your taste. My busy mother used to whip this up when I was younger.I adjusted the seasoning to my own taste. When they're simmering, don't touch them too much. Just leave them bubbling where they are. I don't make nikujaga-type simmered dishes with bonito stock, so this is just a standard simmered recipe.I also make simmered dishes with bonito stock, but with different ingredients. This dish doesn't contain any soup stock, so use the katakuriko at the end to blend and thicken the sauce. It will be warm, comforting and tasty. Recipe by horseland cookpad.japan -

And if you like bread, dipping it in its tomato sauce… Mmmmmm!! Delicious, delicious! Are you up for trying it?? I look forward to your photos!! Chus Molinero -
Rich Stir-Fried and Simmered Potatoes Rich Stir-Fried and Simmered Potatoes
New potatoes taste great deep-fried, but I stir-fried them instead and then simmered them, and mixed in some mayonnaise...and they turned out rich and delicious!I don't bother to shave the corners off the potatoes. If they fall apart a bit while cooking they're just that much tastier. It takes 10 minutes to cook golf-ball sized potato pieces. Don't heat the mayonnnaise for too long or it will split; just mix it in then turn off the heat, and mix a little more with residual heat. Recipe by kebeibiko cookpad.japan -
Stir-fried & Simmered New Potatoes Stir-fried & Simmered New Potatoes
My mother used to make this every year when new potatoes were in season. When simmering the potatoes, turn them over occasionally so that they cook through evenly. Adjust the heat and take care not to let all the simmering liquid evaporate before the potatoes are cooked through. You can use any miso you like, but I recommend using a smooth kind with no grains for a better looking dish with a smoother feel.
