Remove cartilage and excess fat off boneless chicken thighs with kitchen shears.

Mix all marinade ingredients into a bowl, soak chicken meat and cover with plastic wrap. Refrigerate for minimum 3 hours, yet it’s best kept overnight up to 24 hours to let the meat soak up all that umami juice.

Remove chicken meat from marinade and pat dry with kitchen towel. Melt unsalted butter on medium-high heat, cook chicken skin side first until beautifully browned. Flip it over and baste with butter like you would when cooking steak until chicken is 3/4 cooked.

When the chicken soaked most of the butter, strain the marinade mixture into the pan and cook the alcohol out for 20-30 seconds. It makes an awesome sauce to pour over veggies or rice!

Cut chicken into strips and sprinkle with white sesame seeds.
