Here's a fabulous twist on a potato salad that has chopped biltong added into it. This is a great side dish. Perfect for a summer BBQ!

Biltong is a cured dried meat from South Africa that's cut into fine strips and seasoned in a variety of flavours, usually made from beef or game meats. It's a great high protein low fat snack on its own but can also be added into dishes too. Here I've used a Piri Piri seasoned biltong but a smokey BBQ flavour or regular plain biltong flavours would work equally as well.

Ingredients

20 mins
3-4 people
  1. 1 kgnew potatoes, skins left on, boiled until fork tender,
  2. 30 gPiri Piri seasoned biltong, chopped finely,
  3. 4 tbspsoured cream,
  4. 2 tbspPiri Piri sauce,
  5. 80 gcucumber, chopped finely,
  6. 3spring onions, finely chopped,
  7. 2 handfulswild rocket leaves,
  8. A fewfresh mint and parsley leaves, chopped,
  9. Salt and pepper to season

Cooking Instructions

20 mins
  1. 1

    Simply add all of the ingredients into a large bowl and toss everything together until fully incorporated and coated in the sauce evenly.

    Cover and refrigerate until ready to eat. Enjoy! :)
