Mango-cucumber kabobs

Sweet mangoes, cool cucumbers, and a hint of spicy chilli flakes make this Mango Cucumber Kabobs are the perfect light accompaniment at summer picnics and BBQs. It is utterly refreshing on hot summer days.
There is no long list of ingredients to make this Mango Cucumber Kabobs that is sweet and crunchy, with a hint of spice, and is a different take on a fruit salad. All you need is some ripe mangoes, cucumber. Crunchy cucumber offers a nice contrast to the soft mango.
These cute little numbers take all of 15 minutes to put together and can totally be prepped ahead and dressed last minute!
Just slice the cucumber and peel and cut the mangoes into thick chunks. I used a small cookie cutter to cut out the mango. Whisk the vinaigrette (lime juice, zest, olive oil, chiili flakes and salt) and marinate the mango and cucumber for at least 30 minutes for the flavours to develop. When ready to serve, thread the mango and cucumber onto the skewers in an alternating way.
You can also thread watermelon or mozzarella cubes to add more colour and flavour to these fruit kabobs.

Cooking Instructions

Whisk lime juice, lime zest, oil, and salt, chilli flakes in a large shallow dish until combined.

Add the cucumber and mango and gently toss to coat.

Chill and marinate for at least 30 minutes.

Thread the cucumber and mango pieces onto skewers in an alternating fashion.

Drizzle some leftover dressing over the skewers and serve.
