This is fresh currant, passed through a meat grinder, with the addition of sugar. It retains all the vitamins, enough for any long winter. Sugar is an excellent preservative, you can store jars just in the kitchen cabinet.

Cooking Instructions

Free blackcurrant berries from twigs and leaves. Rinse under running water and dry.

Weigh the berries. Weigh the sugar. Sugar should be twice as much as berries.

Skip the berries through a meat grinder into a container convenient for heating. Add sugar.

Over very low heat, stirring with a wooden spoon, heat the currants until the sugar is completely dissolved.
На очень медленном огне, помешивая деревянной ложкой, нагревать смородину до полного растворения сахара.

Do not bring to a boil. If foam starts to form, then the temperature is high, you need to reduce it.
До кипения не доводить. Если начинает образовываться пена, значит температура высокая, нужно уменьшить.

Prepare jars with lids. I just wash them in the dishwasher at high temperature.
Подготовить банки с крышками. Я просто мою их в посудомоечной машине при высокой температуре.

In still hot, clean and dry jars, pour hot currants. By this point, the sugar should be completely dissolved. Close lids tightly. You can wrap it with something warm, but it is not necessary.
В ещё горячие, чистые и сухие банки, разлить горячую смородину. К этому моменту, сахар должен полностью раствориться. Плотно закрыть крышки. Можно укутать чем нибудь тёплым, но это не обязательно.

I learnt this recipe from a cooking class a long time ago, but I lost the recipe so I recreated it on my own. I think they taught us to wash the kumquats with rice bran, but I just eliminated any complicated steps.I used a 1/4 of the weight of the kumquats in sugar (if you want to preserve the jam for a long time, add more sugar). Incidentally, I always divide the jam into small batches and freeze it. I don't bother with sterilizing the jars with boiling water (since I've never had the jam go bad this way.
