  1. 4 tablespoonssunflower oil - 2 for the vinaigrette and 2 for cooking the broccolini
  2. Bunchbroccolini
  3. 2 tbspwhite wine vinegar
  4. Bunchasparagus
  5. Pinchdill
  6. 1Quarter cabbage
  7. Pinchsalt
  8. 1 Tspgaram masala
  9. 1 Tspginger powder
  10. 1red radish
  11. Stripsprosciutto
  12. Sprigsmint

Cooking Instructions

    Base: Thinly sliced cabbage is lightly salted, left for 30 mins, then squeezed and tossed with fennel, dill, 1 tbsp sunflower oil + 2 tbsp white wine vinegar.

    Middle: Broccolini stir-fried with garam masala + ginger powder until lightly crisped.

  3. 3

    Top: Prosciutto-wrapped asparagus, roasted at 220°C on foil for 10 mins until crisp.

    Garnish: Twisted radish "flowers" with fresh mint shoots🌸
