Steps

For the gatta making -In a bowl take besan also add yogurt, chilli powder, turmeric powder, carom, hing, oil, salt and mix it well.Make sure the dough turns moist

Further add water or as required and knead the dough smooth and soft.

Now pinch a ball sized dough and prepare cylindrical logs.

In a large vessel boil 4 cup water. Once the water comes to a boil drop in prepared besan dough boil for 10 minutes.

Once the besan dough is cooked it starts to float. Drain them cool and cut the gatta into small pieces and fry in the hot oil and keep aside.

Now in the same pan heat ghee add cumin, cinnamon, clove, bay leaf, black pepper, cardamom and saute them.

Further add cashew nut, raisins, and chopped onion saute them nice golden brown then add ginger garlic paste and saute 1-2minutes more.

Now add all dry masala powder, salt and cook it on law flame until the spices turn aromat.

Further add water and fried gotta mix it well.

Now add cooked rice, coriander leaves and mix it well.

Now Rajasthani govind gatta pulao is ready. serve with raita, curd or papad.
