Shanghai Style Sweet And Spicy Crispy Lotus Stem is a very unique and healthy dish as the lotus root is rich in vitamins and Gluten free

Ingredients

25 minutes
4 servings
  • 4Lotus stem, washed thoroughly, peeled and cut into 1 cm thick pieces
  • 2 clovesGarlic finely chopped
  • 1 inchGinger finely chopped
  • 2 tablespoonsRoasted Peanuts
  • 2Spring Onion (Bulb & Greens) sliced
  • 2Fresh Red chillies, sliced
  • 1 teaspoonwhite vinegar
  • 2 tablespoonCooking oil
  • For Stir-fry Sauce
  • 1/2 tablespoonDark soy sauce
  • 1 tablespoonLight soy sauce
  • 1 tablespoonVinegar
  • 2 teaspoonRed Chilli sauce
  • 1 teaspoonSugar
  • 1 teaspoonSesame or olive Oil
  • 1 tablespoonCorn flour
  • For the slurry
  • 2 tablespoonsWater
  • 4 tablespoonscornflour for dusting the lotus stem
  • 1/4 teaspoonSalt or to taste
  • 1 teaspoondry roasted white sesame seeds

Steps

25 minutes
  1. 1

    Mix all the ingredients listed under sauce in a small mixing bowl.

  2. 2

    Mix the ingredients for the slurry in another bowl along with water.

  3. 3

    Boil the sliced lotus stem pieces in a saucepan with 2 cups of water and a tablespoon of vinegar so that the lotus stem does not turn brown.

  4. 4

    After 5 minutes of boiling, strain the water and spread the lotus stem on a kitchen towel napkin to absorb all the moisture.

  5. 5

    Next add 4 tablespoons of cornflour and salt, add the boiled lotus stem and dust it to coat it evenly.

  6. 6

    Now heat a flat bottomed pan, drizzle olive oil and place these coated lotus stems and fry on both side till it becomes brown and crispy.

  7. 7

    Now heat a wok with oil, add in the ginger and garlic, sauté for a minute.

  8. 8

    Now add the sauce mixture slowly and keep stirring till it turns thick.

  9. 9

    Once it is done add the crispy lotus stem and sprinkle the roasted peanuts, red chillies and spring onions and give it a nice stir on a high flame.

    Switch off the flame and garnish with roasted sesame seeds and spring onion greens

    Serve the Sweet And Spicy Shanghai Crispy Lotus Stem, hot.
