Ingredients

120 minutes
5servings
  • 1 kg.chicken pieces
  • 1bowl. basmati rice
  • 1&1/2 tablespoons. garlic ginger paste
  • 1 bundle. coriander leaves
  • 1/2 bundle. mint leaves
  • 1 cup. curd
  • 1 tablespoon. Kashmiri red chilli powder
  • As needed. biryani masala
  • 1 teaspoon. turmeric powder
  • 6. green chillies
  • 1 teaspoon. red chilli powder
  • 1 &1/2 cup. fried onions
  • 1 teaspoon. black pepper powder
  • 1 cup. chopped onions
  • 4bay leaves
  • As needed. garam masala which is needed for biriyani
  • 1 teaspoon. jeera / cumin
  • 2 tablespoons. oil
  • As needed. ghee
  • As required. water
  • 1 tablespoon. melon seeds
  • 8cashewnut
  • As needed. salt
  • Few strings of saffron soaked in one cup of milk
  • 1 teaspoon. rose water
  • 2 drops mitha atar (essence)

Steps

120 minutes
  1. 1

    After washing the basmati rice with the water then soaked the rice for half an hour and strained it and spread to the plate.

    Blend coriander leaves,mint leaves with adding curd,(blanched cashewnut and melon seeds),salt,little bit of oil and green chillies one red chilli and keep aside,

    Wash chicken pieces with water put blended green masala and garlic ginger paste, biryani masala,red chilli powder,turmeric powder to the chicken mix well and keep aside for half an hour,

    Now heat the pan adding oil and ghee (as needed), to the pan add one bay leave and jeera after boiling the oil and ghee add chopped onions and saute it for few minutes add mixed chicken pieces fry then saute for few minutes then lower the flame of the oven and cover with the lid cook for certain minutes till the chicken is 80% cooked. and keep aside.

    Now boil rice adding little garam masala,salt oil in another pan when 70% is ready strain it and spread to the pan, now heat the pressure cooker adding ghee add oil then put bay leaves,jeera,garam masala

    Then put chicken pieces to the bottom of the pressure cooker then put one layer of rice add ghee fried onions and biryani masala salt as needed spread it,

    Next put chicken pieces then one layer of rice. Add little garam masala powder,ghee do all the layer in the same process till all are arranged.

    Put saffron soaked milk,fried onions little biryani masala, finely chopped coriander leaves and mint leaves
    meetha attar,rose water put to the pressure cooker,then put the pressure cooker upon the iron tawa give heat in low flame of the oven for fifteen minutes covered the pressure cooker by the heavy lid for giving dom to the biryani, when done serve hot with fish curry.
