My favourite of all yum dishes is this simple curry which my grandma was prepared with our regular spices.She said eating yam is good for health as it purifies blood.We call it Oper Dalna.Let us prepare this.d3licious yam curry or oper dalna.

My favourite of all yum dishes is this simple curry which my grandma was prepared with our regular spices.She said eating yam is good for health as it purifies blood.We call it Oper Dalna.Let us prepare this.d3licious yam curry or oper dalna.
Steps

Peel & cut the big chunk of yum & potatoes into smaller cubes.Wash them & rub with salt & turmeric.

Heat oil in a wok.Fry the yum pieces in batches.Keep aside.

Temper the same oil with a bay leaf & cumin seeds.Add chopped onions,whole onions & fry for 1-2 mints.

Add chopped tomatoes,ginger paste, cumin powder, coriander powder,salt, red chilli powder,turmeric powder & sugar.Saute for 1-2 mints.Add the fried pieces of yum & potatoes.Fold in well & stir for a mint.

Add a cup of water.Boil for 4-5 mints.Add cinnamon, cardamom,cloves powder,ghee & cook for another 1 minute.

Garnish this yum curry with chopped coriander leaves on a serving dish.

Serve hot this delicious yum curry or oler dalna with steamed rice or phulkas.

Serve hot
