This was another random meal using left over rotisserie chicken. My 2.5 year old LOVED it, had seconds then has large serving for lunch the next day. Was a hit with my hubby and my BFF who was visiting. Delish!!

This was another random meal using left over rotisserie chicken. My 2.5 year old LOVED it, had seconds then has large serving for lunch the next day. Was a hit with my hubby and my BFF who was visiting. Delish!!

Ingredients

  1. 1/2grocery store rotisserie chicken, shredded
  2. 1 boxbowtie pasta
  3. 1.5 tbsbutter
  4. 2.5 tspflour
  5. 1/4 cupwhite wine
  6. 1 cupchicken stock
  7. 3/4 cupcream(I used light) u could use milk as well
  8. 1/2 cupparmesan cheese, shredded
  9. 1/2 cupshredded mozzarella cheese
  10. to tasteSalt and pepper
  11. 1.5 tspdried parsley
  12. 1 tsppaprika
  13. 2 cupschopped fresh kale

Cooking Instructions

  1. 1

    In a pot, boil and cook pasta el dente. In the last 3 min of cooking time add the kale to the pot. Drain then set aside

  2. 2

    Return pot to heat and belt butter. Add flour to the butter and cook for 2-5 min. (Whisking)

  3. 3

    Pour in the white wine and cook for further 5 min. (Whisking occasionally)

  4. 4

    Add all your seasonings then add your chicken stock and broth. Let it cook for about 8 min, should have slightly thickened.(whisking occasionally)

    Add all your cheese and stir to combine. Add your shredded chicken and stir.

  6. 6

    Return your pasta and kale into the pot and mix so all the sauce costs all the pasta and kale. Place lid on pot and let sit on low heat for 5 min.

    Serve hot.
