Balinese Spicy Shredded Chicken (Ayam Sisit Bali)

Boil the chicken breast until its cooked well, shred it and put it aside. Do not throw the chicken water, we will use some of it for stock.

Pour mashed or blended ingredients into a sauce pan and stir it until its cooked well. Add kaffir lime leaces, bayleaves, galangal, lemongrass, salt, sugar, and pepper, mix it well. Add the chopped tomatoes, stir it well.

Add shredded chicken into a sauce pan, mix it well. Pour 1/2 cup of chicken stock and cocoonut milk, stir it. Cook with low fire until the water reduced. Stir it again.

Serve it with plain steamed rice or coconut rice.
