Ingredients

  1. skinny taco salad ingredients:
  2. 1 headRomaine lettuce, washed and roughly chopped
  3. 1avocado, peeled, pitted and diced
  4. 2 cupscherry or grape tomatoes, halved (if desired)
  5. 2 cupsfresh cilantro leaves, loosely packed
  6. 1 cupshredded sharp cheddar cheese (I used the 2% lowfat cheese)
  7. 1 cuptortilla strips
  8. 1 canblack beans, rinsed and drained
  9. 1 canwhole kernel corn, drained
  10. 1 canblack olives, drained
  11. halfa small red onion, halved and thinly sliced
  12. skinny cilantro lime dressing ingredients:
  13. 1 cupfresh cilantro, loosely packed
  14. 1/4 cuporange juice
  15. 3 Tbsp.lime juice
  16. 1 Tbsp.honey (optional sweetener)
  17. 1/4 tsp.ground cumin
  18. 1/8 tsp.salt
  19. 1/8 tsp.freshly-ground black pepper
  20. 2 Tbsp.olive oil

Steps

  1. 1

    TO MAKE THE SALAD: Toss all salad ingredients together until combined, or serve "rainbow-style" lined up on top of the lettuce. Drizzle and toss with honey lime vinaigrette and serve.

    TO MAKE THE DRESSING: Add cilantro, orange juice, lime juice, honey, cumin, salt and pepper to a food processor or blender and pulse until combined. Gradually stream in the olive oil while pulsing until combined.
