Roasted tomato and methi is an excellent combination. A simple but innovative dish. It's my own creation.

Steps

First roast the tomatoes on the oven peel them and make a paste with green chilli.

Then in an khadi put oil fry the panner and keep it aside. Then chop the onions fry and make batista. Keep it aside.

Now in the same oil. Add a bay leaf, few methi seeds and garlic paste, saute it then add ginger paste. Fry it.

Then add the tomatoes paste and fry it for 4-5 min. Then add turmeric, redchile, dhaniya and jeera powder also add sugar.. Let the masala cook. Now add the fresh methi. And let it cook for 5 min. Then again add rest of the methi leaves and let it cook till oil starts coming out.

Now add water, the fried onions and panner. Add salt to taste and let it cook for 10-15 min in low flame. Now add kasuri methi and garam masala. Cook it for 2-3 min. Serve it with roti /paratha or rice
