Take Maida in a bowl, add ghee and ENO. Mix well before adding water. Once mixed add water slowly and make sure it's not too runny consistency. It should be flowing consistency.

For sugar syrup add sugar and water in a pan. Once it comes to boil, add saffron strands and pinch yellow food colour (optional). Switch of the flame once the syrup turns sticky. Finally add citric acid or lemon juice.

In a piping bag, add the mixture and fry it in hot ghee for about 3 mins. Add the fried Jalebi to syrup, tilt for 2-3 times and remove it from syrup. Serve the Jalebi warm.

Note: Lumps will form while Mixing batter, do not worry it will get fine if u give rest for 5mins and mix with your palm. Sugar syrup shouldn't go to 1 strong consistency so be careful while doing it. Don't soak Jalebi for long time it will become soggy and looses crisp.
