Ingredients

  • 200 gmbhindi/ladyfinger(cut in 1 inch)
  • 2dried red chillies
  • 1chopped onion
  • 1onion cut in cubes and separate the layers
  • 2tomatoes (grind in a mixer to make puree)
  • 1/2 tspcarom seeds(ajwain)
  • 1 tspginger garlic paste
  • 1 tspcoriander powder
  • 1/2 tspturmeric powder
  • 1/2 tspred chilli powder
  • 1/2 tspamchur(dry mango powder)
  • 1/2 tspgaram masala
  • 2 tbspwhisked curd
  • 3 tbspmustard oil
  • to tastesalt
  • 1 tbspchopped coriander leaves

    Heat 2 tbsp oil in a pan add bhindi, fry on medium high flame for 3 minutes,keep stirring. Take out in a plate. Again in the same pan, add layers onion, fry on medium high flame for 3 minutes.Take out in the plate.

    Heat 1 tbsp oil in the pan,add carom seeds, dried red chillies, chopped onion, saute for one minute. Add 1 tsp ginger garlic paste saute for one minute. Add tomato puree, fry on medium high flame for 2 minutes, add 1/2 tsp salt.

    Add 1 tsp coriander powder, red chilli powder, turmeric powder, mix well, fry for one minute, add curd,mix well.

    Add fry bhindi and onion,amchur powder, garam masala and 1/2 tsp salt ir to taste, mix well. Cover with the lid, cook it for 5 minutes on low flame. Turn off the flame.Garnish with chopped coriander leaves. Bhindi do pyaza is ready to serve with roti. Enjoy!!!
