Samosa
Steps

Boil potatoes. Roast coriander seeds. Boil tamarind and dates.

Coarsely crush coriander seeds. Give tomato and garlic boil. Peel and mash potatoes.

Add oil to the pan. Add crushed coriander seeds. Add potatoes. Add dry spices. Mix well, roast for some time.

Add ghee, salt, and ajwain to flour. Add water and knead the flour.

Mix and seive tamarind and dates.

Make roti from the dough. Cut in half. Stuff with filling.

Close it nicely. Make all the remaining samosa like this. Fry in hot oil on medium flame. Fry for a minute.

Refry again. Serve hot with chutney.
