Ingredients

  1. 2.2 lbsground pork (chilled in the freezer until very cold but not frozen)
  2. 10.5 ozboiled pork skin
  3. 1 cupcooked sticky rice, soaked in water until soft (about 160 grams)
  4. 1/2 cupminced garlic (about 65 grams)
  5. 2 tablespoonsseasoning powder
  6. 1 teaspoonsalt
  7. Thai bird’s eye chilies, stems removed, washed and dried, as desired

Steps

    Place all ingredients in a mixing bowl.

    Knead everything together until well combined and sticky, about 10-15 minutes. Add the chilies and knead for a moment longer.

    Transfer the mixture to an airtight container. Let it ferment at room temperature for 4 days, until it develops a sour flavor. It can then be eaten as is or used in other dishes.
