Ingredients

Serves 3 servings
  • 1/2 cuptextured soy protein (about 40 grams)
  • 2eggs
  • Shredded melting cheese, such as Monterey Jack or mozzarella, to taste
  • Refried beans, to taste
  • Avocado, for garnish, to taste

Steps

10 minutes
  1. 1

    Make sure the textured soy protein is already rehydrated and drained. Sauté it with chopped onion and garlic as you would in other soy recipes.

    Add the eggs and cook until done, then add the mixture to your tortillas.

    Heat the burritos on a skillet or griddle for about 3 minutes, turning so they don't burn. Enjoy with your favorite salsa.
