When you are a vegetarian (when living with parents and living in India, following keto diet is difficult as you really don’t get foreign vegetables like kale, arugula, asparagus, etc that commonly. Plus lockdown
Paneer (or cottage cheese as it’s called in English), is good sauce of high protein low carb option. Adding some flavour and colour to the salad make it look more exotic. Vegetables like zucchini, cherry tomatoes (again not so common vegetables in India, but available in BigBasket) and cabbage really add colour and flavour to the salad. And well, a salad is always incomplete without a lettuce. In my case, the lettuce being iceberg.
So let’s get on with the recipe.

Heat a pan with oil and add paneer cubes. Fry paneer cubes for 3-5 minutes on low-medium flame. Transfer the cubes to a plate.

Add cabbage to the same pan and fry for 5 minutes or until it just starts turning brown. Add salt, zucchini and cherry tomatoes and fry for 2-3 more minutes on low heat. Keep stirring. Switch off the gas and add paneer and black pepper and stir

Line your serving bowl with lettuce leaves and transfer the salad to the bowl. Optional- add coriander chutney for taste.
