In a pot pour the olive oil and Sautee the cauliflower, potato and onion for a few minutes

Add the minced garlic and thyme then pour the vegetable broth until it covers the vegetables

Cook for 30 minutes on medium heat or until a fork is inserted and the vegetables are tender

Blend with an immersion blender or pour in batches in a normal blender
- 5
For the non vegans add heavy cream after blending and cook it for 3 more minutes.Top it off with some croutons and enjoy
