I wanted to make a cake full of fruit for a meal with my favorite cousin.

For my yogurt cake, I used a peach-flavored yogurt. See my other recipes for details.

For the peach-mango mousse, make a pastry cream with the egg yolks, sugar, cornstarch, and milk. Add the softened gelatin sheets, then stir in the jam. Let cool.

Whip the heavy cream to stiff peaks, then gently fold it into the cooled mixture.

Pour the peach-mango mousse into a flexible mold. Place the yogurt cake base on top. Cover with plastic wrap and freeze.

The day before serving, unmold the cake onto a serving platter and let it thaw overnight in the refrigerator. The next day, decorate your cake with seasonal fruit. I used banana, kiwi, raspberries, and red currants. Have fun!
