Grilled halloumi and vegetable skewers

Recently I fell in love in haloumi cheese cooked on the BBQ. It's a healthy enough cheese, specialy when it goes together with a bunch of veggies.
In this simple recipe wanted to show how to cook different ingredients on one ( well... on two) skewers. I cut halloumi and veggies into big chunks so I could get bigger surface on them for grilling. I cooked them on two skewers for a better stability during bbquing.
To have my sweet potato chunks ready with the rest of ingredients I blanched them in salted water for 2 minutes before skewering.
When kebabs were ready I brushed then with herb olive oil and served it with good quality hummus ( optional).

Ingredients

2 - 3 people
  • 225 gHalloumi cheese
  • 6sweet mini peppers
  • 2medium sweet potatoes
  • 2small red onions
  • 1courgette
  • Sea salt
  • Olive oil
  • Black pepper
  • Basil
  • Chives (optional)

    Cut the halloumi cheese into 4 big chunks. Soak it in the water for at least 3 hours

    Cut the potatoes into similar in size chunks. Blanch potatoes in salted water for 2 minutes. Cool it down after

    Cut the red onions into similar chunks. About 1/2 if onion is small

    Cut the courgette into similar size widewise trimming the skin off to create a good surface for grilling it.

    Start skewering the ingredients making sure the skewers are If using wooded skewers soak them in the water for an hour befor use.

    Brush the skewers with the olive oil. Sprinkle them with sea salt. Brush the grill with the touch of olive oil before placing skewers on it. Cook them directly on medium heat for few minutes from bith sides.

    To make a basil oil chop finally basil and mix it with 2 tbsp of olive oil. Brush the skewers towards the end when they are almost ready.
