First, rinse the rice and lentils thoroughly and soak them for 30 minutes.

Add three times the amount of water to a pressure cooker, then add the soaked rice and lentils, turmeric, and salt. Cook.

After two whistles, the khichdi is ready.

To turn the plain khichdi into masala khichdi, heat oil or ghee in a pan. Add asafoetida and cumin seeds, then sauté the onion. Add tomato, green chilies, ginger, and garlic, and cook until the masala releases oil. Mix in the cooked khichdi, add garam masala, and garnish with cilantro. For extra flavor, you can squeeze in half a lemon if you like.
