(Method for eclairs)

In a pan put water,butter and salt, cook till boiling, add in flour, and mix fast.

Cook till the mixture forms balls in the centre and leaves the sides of the pan.

Remove from fire,add in eggs 1 at a time,mixing fast,

Fill the batter in icing bag and pipe out long lengthwise strips on a greased tray and bake in preheated oven on 250 °c for 5 minutes then decrease the temperature to 180°c for 35 to 45 minutes.

RemRemove from oven and set aside to cool slit eclairs from side,

Fill with whipped cream filling.

(For cream filling)

Beat whip cream with icing sugar till whipped,add mango puree mix well and use.

Dip top in mango glaze.

Melt chocolate and cream in double boiler or use microwave for melting,add mango puree and corn syrup mix very well till smooth now sieve it and use.
