Dhokla is a famous and healthy breakfast Gujarat recipe. Here, the dhokla is made with chickpeas flour (besan) in a idli maker. So named as 'idli dhokla'. The dollars are soft and fluffy and go well as with tomato chutney and hot tea.

Ingredients

  1. For batter
  2. 2 cupbesan
  3. 1 cupyoghurt
  4. 1and 1/3 tsp ginger, green chilli, grated
  5. 1/4 tspturmeric power
  6. Salt as required
  7. 2 tspoil
  8. 1 tspfruit salt
  9. For tadka
  10. 1 tspmustard seeds
  11. 1 tbspchopped, green chillies
  12. 10-12curry leaves
  13. 1 pinchhing (asafoetida)
  14. 1 tspsugar
  15. 1/2 cupwater
  16. 2 tsplemon juice
  17. 2 tbspoil

Cooking Instructions

    Sieve the besan. Transfer to a mixing bowl.

    Add turmeric powder, salt and grated ginger-green chilli.

    Mix yoghurt and make a idli like batter. If request, add water. Rest for 10 minutes.

    Add 2 cups of water in an idli maker. Grease the idli moulds with oil.

  5. 5

    Mix the 1 tsp fruit salt with the batter. Place 2 tbsp batter in each hole of greased moulds. Cover and steam for 10-12 minutes.

    Heat 2tbsp oil in tadka pan. Add mustard seeds, hing and allow to splutter. Add chopped chilles and curry leaves. Then add sugar and water. Mix well.

    Switch off the flame. Add lemon juice and mix well. Pour this tadka to each idli dhokla.

    Serve and relish hot and tangy besan idli dhokla with chutney and hot tea.
